Spiced Carrot and Lentil Soup
Ingredients you’ll need:
- A pinch of chili flakes
- Two teaspoons of cumin seeds
- Three tablespoons of olive oil
- 140 grams of split red lentils
- 600 grams of washed and finely grated carrots
- One cube of vegetable stock
- 125 ml of milk
- Plain yogurt
- Naan bread
Instructions to make the Spiced Carrot and Lentil Soup:
Step 1: You start by taking a large pan and then heating some oil in it. Then, add a pinch of chili flakes along with two teaspoons of cumin seeds. Dry fry these ingredients until they start jumping around the saucepan.
Note: This dry frying method should release some great aromas.
Step 2: Use a spoon and take about half of the mixture from the pan and set it aside. With the remaining mixture in the pan, add 600 grams of washed and finely grated carrots, two tablespoons of olive oil, 140 grams of split red lentils, one cube of vegetable stock and 125 ml of milk to the pan. Bring to a boil. Let it simmer for around 10-20 minutes or until the lentils have softened.
Step 3: Using a food processor or a stick blender, combine the mixture until you are left with a smooth soup.
Step 4: Now, season the soup as per your taste. You can pour a dollop of plain yogurt along with some roasted spices and serve with naan bread.

Turmeric, Ginger and Coconut Fish Curry
Ingredients you’ll need:
- 325 ml of light coconut milk
- 400 grams if boneless and skinless cod loin (chopped into cuts)
- 300 grams of frozen peas
- 300 grams of sugar snap pease
- Two finely sliced onions
- One tablespoon of olive oil
- ½ tablespoon of turmeric
- One tablespoon of garam masala
- One ginger
- ½ teaspoon of cayenne
Instructions to make the Turmeric, ginger and coconut fish curry:
Step 1: You start by taking a large pan and adding the oil along with the onions. Fry the onions for around 6 minutes and then add in the spices and ginger and cook for another 2-3 minutes. Then, proceed by adding the coconut milk and 100 ml of water. Stir properly and cook for another 8-10 minutes.
Step 2: Next, add the frozen peas, sugar snap peas and the cod and cook for 5 more minutes. You can finish with some black pepper, sliced chilies and lime wedges.
Note: The dish can be served with warm rice.
